coconut & banana sweet brown rice

This is delicious and serves as a healthy breakfast or a small portion for dessert.  Serves 6.

2 Cups of short grain brown rice, washed and with water an inch above it - par boiled until nutty.   

Drain, and add into pot 600 ml of coconut milk or 400 ml coconut milk and a small amount of coconut cream.  

Add spices of your choice, a cinnamon stick, 1/8 - 1/2 tsp to taste of the following - nutmeg, all spice, cinnamon, cardamon.  

Add the following:

- a splash of pure vanilla essence.

- pre soaked raisins, a handful

- 1 - 2 bananas, mashed.

- 2 Tb dessicated coconut.

- 1-2 Tb Rapadura sugar / 1 Tb Palm sugar  *Rapadura is a mineral rich Indian sugar, rich in silica.  However, too much rapadura will act like any other sugar in your body - altering your chemistry.  Do not over do.

Bake in oven with lid on so it doesn't dry out at low heat for 30-45 minutes.
